This is a great recipe for a summer time Sunday dinner, and you know what? I do enjoy it. The pasta water that you should add to your pasta will also make it a little more digestible. This is because the water will not have the same acidity as your pasta. This is why pasta that has been cooked to a lower temperature (like boiling water) will have more salt, acidity, and less of a crunch.
